Aspect: Golden and crystal-clear. Sensual and regular effervescence. Nose: Radiant and refined, source of rare
emotions. The Pinot Noir, exclusive varietal,
harvested by hand in 2012 on a 1 hectare plot facing south in the Grand
Cru of Aÿ, illustrates its full worth, between scents of candied red and
black fruits and touches of outstanding spices. |
Palate: Joyful power,
fruity and elegant, highlighted by the chalky minerality of the localities «
La Côte du Moulin » and « La Porte aux Brebis ». Unforgettable
delicacy thanks to 6 years of ageing of the bottles on laths, before disgorgement,
in the deep cellars of the house, underneath the original vineyard. With this reserved Grand Cru
Aÿ 2012 Collection Privée (6,100 bottles), Sébastien Walasiak, cellar
master of the Champagne house Collet, signs a fabulous champagne. |
