Guide VERON des Champagnes 2012

In
a strong position because of its 147 members on a vineyard of 325 hectares
located in the heart of the Côte of the Bar in the Arce valley, the
winegrowers’ coop of Chassenay d’Arce is making a Champagne of high expression.
The presentation of this Champagne is traditional and
careful.
Appearance :
- Yellow with green flashes
- Fine bubbles
- Persistent Cordon
Aroma :
- One is questioned by its complexity
- The first nose expresses a great maturity on overtones of brioche,
butter and mild tobacco, result of the yeast autolysis of the « prise
de mousse » during a long ageing on lath
- It then develops towards a great aromatic palette where some citrus, hazelnut and almond overtones are becoming intermingled. This is the expression of the 40% of Chardonnay but also of the 60% of Pinot Noir when it comes to the sensuous aroma of honey, plum, fig, blackcurrant and blackberry.
Taste :
- Touching balance between roundness, complexity and delicate
minerality, translation of the noble soils of the Côte of the Bar
- One can find back citrus peppered with apple and pear
- Finale deliciously spicy on cinnamon and pepper
- Good length on the palate.
This blending Brut Vintage 2004
discloses a stirring personality which translates the know-how of Brice Bécard,
the Cellar Chief of Chassenay d’Arce.
To be served with a festive aperitif but also nice along the meal with an angler filet for example.
