Guide VERON des Champagnes 2012
(around 19 euros per bottle)
Since
1932 the family Jacques, located in BAYE, has been growing on a 17 hectares
vineyard the 3 grape varieties in line with the principles of the Champagne
tradition.
The presentation of this Champagne in
a special tinted flask decorated with an original golden label is luxurious.
Appearance :
- Very fine bubbles
- Light golden yellow
- Beautiful Cordon
Aroma :
- Open, delightful and elegant
- Toasted first nose with a brioche, honey and beeswax dominant
characteristic which translates a great maturity obtained by a long ageing
on lath. This process during which the yeast of the « prise de
mousse » autolyse is perfectly mastered by Rémi Jacques, the Chef of
the cellar
- The bouquet then expresses an outstanding complexity on citrus,
apple and pear, expression of the 70% of Chardonnay of old vineyards, accompanied
with hazelnut, liquorice touches, then dry apricots and grapes.
Taste :
- Mineral, amazing and refreshing attack, supported
by a festive sparkling
- The mouth then discloses a nice and hearty roundness, expression of
the 30% of Pinot Noir
- Delicious overtones of citrus and pear
- Very long finale, delicately peppered.
The genuine and charming personality of this Blending Gisèle Brut 2005 is a great success for the Champagne Yves Jacques.
Ideal for the aperitif but also for your starters such as fried foie gras or why not three salmons starters.
