Guide VERON des Champagnes 2012

The Champagne Pierre Callot who settled in the
heart of the Côte des Blancs has been implementing for already 6 generations a
responsible and environment oriented viticulture on his 7 hectares vineyard
mostly located in soils classified as Grand Cru.
The presentation of this Champagne is traditional.
Appearance :
- Golden, of a rare density for a Blanc de Blancs, expression of old
vineyards (60 years) from which the grapes are stemming
- Fine bubbles
- Closed-in Cordon
Aroma :
- Rich, hearty and bewitching it brings one a singular pleasure which
reflects the exceptional maturity of the Chardonnays (natural alcohol
content : 11% Vol.) and the wonderful potential of the year 1999
- Exceptional complexity obtained by a long ageing on lath, perfectly
mastered by Thierry Callot, its maker.
- The unpredictable aromas of candied citrus, dried raisin and
apricots, of walnut, stewed apple and pear are becoming harmoniously
intermingled with tinges of butter, buns, plum and roasted coffee
- Patience is rewarded by the appearance of delicious overtones of
honey and beeswax.
Taste :
- Uncommon presence thanks to a singular balance
between generosity and elegance, safeguarded by the judicious stuck of the
malolactic fermentation
- One can find again the dry fruits and honey mentioned in the
« Nose » part, supported by delicate tinges of gingerbread
- Outstanding length on the palate.
With this Vintage 1999 at its peak,
the Pierre Callot Champagne conveys a great image of the noble soils of the
Côte des Blancs.
To be kept for special moments, for the aperitif together with foie gras toasts or even better to accompany a gastronomic menu.
