The Pierre Callot Champagne who settled in Avize, on a 7 hectares vineyard (mostly located in the soils classified Grand Cru) in the heart of the wine area of the Blancs Hillside, has been implementing for 6 generations a responsible viticulture compliant with the environmental values.
The presentation of this Champagne in a special flask is a success. It combines novelty and tradition.
Appearance :
- Light
yellow, luminous with green reflections
- Very fine bubbles
- Closed-in and persistent Cordon
Aroma :
- Persuasive
and sensuous, of a great complexity thanks to the blending of three famous
years : 2004, 2005 and 2006
- First
nose refined, on fresh butter and brioche peppered with toasted and
roasted touches of honey and beeswax, result of a long ageing on lath (5
years) during which the yeast of the « prise de mousse » slowly
autolyses
- The nose then discloses nice overtones of citrus, white fruits and flowers.
Taste :
- Frank
attack quickly replaced by an ample and hearty roundness, result of a 10
months maturing of the basis wines on fermentation lees
- Gorgeous
and dense presence, expression of the old vineyards planted in 1965 and
grown in the Clos Jacquin, a noble soil of Avize classified Grand Cru
- Finale
slightly acid peppered with tinges of gingerbread obtained by a short
transition of the blending in wooden tanks (3 months)
- Outstanding length on the palate.
With this Clos Jacquin Champagne, the maker, Thierry Callot, promises an exclusive Blending stemming from Chardonnay only and with a charming and engaging personality.
A Champagne to be tasted during the meal with a fish verrine or together with sushis.
