Tasting Evening of a selection of great Champagne cuvées
Mythical Champagne
Located in Mareuil-sur-Aÿ since 1522 and proprietor of the mythical Grand Cru site Clos de Goisses, the Champagne House of Phillipponnat became part of the Lanson BCC group in 1997. The House produces great Champagnes, of inimitable style, dominated by Pinot Noir, combining freshness and concentration.
Luxurious
and traditional look.
Appearance :
·
Deep gold
·
Fine perlage
·
Subtle and persistent bead
· Bright and limpid
Nose :
·
Voluptuous and alluring, a true aromatic
symphony
·
Initially revealing aromas of apple, pear
and peach compote, combined with nuances of butter, honey and spiced bread,
delicately toasted and brioche-like, the result of lengthy ageing sur lattes
of the bottles (10 years), helped by cork, before disgorgement
· Then, the nose reveals captivating fragrances of exotic fruits (dried apricot, pineapple) and kirsch, harmoniously mingling with notes of liquorice, roasted coffee, cinnamon and vanilla, perhaps the expression of delicate, melting woody notes obtained from the alcoholic fermentation and ageing part of the base wines in oak barrels, perfectly mastered
Palate :
·
Rich and complex, with rare density, expressed by the
65% Pinot Noir
·
The palate then reveals exceptionally smooth power,
with good substance and notes of pepper, almost structured, enhanced by its
tonic effervescence
·
Mineral finish, deliciously acidulous, with citrus
fruits (lemon, grapefruit), and exotic fruit, an expression of the 35%
Chardonnay, and result of carefully selected first run juice during grape
pressing (cuvée), carefully timed malolactic fermentation and very low
dosage of the bottles at disgorgement (5g/L of sugar added)
· Remarkable length on the palate
With this Clos des Goisses 2000, Thierry Garnier, Chef de Cave of the Champagne House of Philipponnat reveals the unique character of the Clos des Goisses vineyard, the sole site where wonderfully ripe grapes were harvested, a fabulous south-facing terroir of 5.5 hectares with a steep 45% slope, consisting of shallow pure chalk soil, located in Mareuil-sur-Aÿ. This Cuvée is a wonderful interpretation of the vintage of 2000. An absolute must-have drink.
A definite dinner Champagne, reserve for
large tables and special moments, and why not to accompany feathered game or
Beef Tournedos Rossini with foie gras and truffle.
