The
Champagne House of Philippe Gonet passionately cultivates 19 hectares of
vineyard, consisting of 45 plots with an average age of 30 to 40 years. The Chardonnay,
of which a third is obtained from the fabulous terroir of Mesnil-sur-Oger
where this Champagne House has stood since 1830, remains the preferred vine.

Nose :

The nose is structured and alluring, a source of
intense emotions
·
Superb at first nose, characterised by good maturity,
with aromas of butter, brioche, caramel, delicately toasted, enriched by honey
and roasted coffee, an expression of lengthy ageing sur lattes of the
bottles (4 years) in the secret of the centuries old cellars, tunnelled out of
chalk, of this Champagne House where it is kept at a constant temperature of 12°C

The nose therefore reveals an incredible aromatic
spectrum, expressed by the noble clayey-calcareous terroir of 13 meticulously
selected plots in Oger and Le Mesnil-sur-Oger, where the Chardonnay is
obtained, the sole vine of the Cuvée

Delicious mingling notes of hazelnut, apple, pear, fig,
apricot and raisin, candied citrus fruits together with subtle hints of mint
Palate
:

The attack is pure and mineral-like, the
result of soft pressing the grapes in an ancient vertical Dollat press,
followed by a quick increase in sensations
·
The palate then develops a richly dense roundness, bolstered
by a gorgeous spicy touch (pepper)

Delicious acidulous finish from the moderate dosage,
with 7g/L of sugar added before disgorgement

This Blanc de Blancs Grand Cru Millésime 2006 has the right balance between elegance and vinosity, delivering a wonderful image of the 2006 vintage. A superb reward for the ecological approach and talent of wine grower and producer Pierre Gonet and Chef de Cave at the Champagne House of Philippe Gonet.
Ideal as an aperitif,
with foie gras canapés, or with seafood or pan-fried fish.
