Located in Rouvres-les-Vignes (Aube) since 2000, Nathalie Falmet, Wine grower and Oenologist, practises reasoned wine growing on a vine yard of 3.5 hectares consisting mainly of Pinot Noir and Pinot Meunier, with 50 ares of Chardonnay and passionately produces around 35,000 bottles of Champagne per year.

At first nose it is marked by rich scents of chocolate
and caramel, together with delicate notes of mocha, roasted coffee and blond
tobacco, superb expressions of the great maturity of this cuvée,
obtained by lengthy ageing sur lattes of the bottles before disgorgement
(4 years)

Delicious aromas of damson, plum and kirsch,
expression of the equal proportions of very ripe Pinot Noir and Pinot Meunier

Then reveals elegant and subtle woody notes, slightly
spicy, the result of vinification of part of the base wines in oak barrels
fabricated by Jérôme Viard

Dense and mineral, characteristic of the beautiful terroir
of the Val Cornet plot, in Rouvres-les-Vignes in the Côte des Bar, sole origin
of the grapes

red fruits (redcurrant, raspberry and strawberry), strengthened by gentle
effervescence

With this Cuvée du Val Cornet, Nathalie Falmet presents her personal interpretation of the 2007 vintage, the sole harvest year. Her strong personality, based on a particular balance between generous richness, rare intensity and mineral freshness, is the result of meticulous and perfectly mastered wine growing and oenology, it delivers rare pleasure.
Drink as an aperitif, with foie gras toasts on
a bed of caramelised pears, or why not, with a gourmet meal.
