Guide VERON des Champagnes 2012
(around 18 euros per
bottle)
With his 5 hectares vineyard the family Tissier
has been bringing for several generations its contribution to the expression of
the Chavot-Courcourt Terroir and this in respect with the great Champagne
traditions.
The sober and careful presentation
of this Champagne is a success. Its gorgeous cap is decorated with the portrait
of Aphrodite who was the goddess of love and beauty in the Greek mythology and by
whom the family Tissier is fascinated.
Appearance :
- Nice salmon colour
- Plentiful happy bubbles
- Refined and persistent Cordon
Aroma :
- Open and persuasive. It leads you straightaway in
a festive red fruits universe (blackcurrant, raspberry, cherry), and of
peach and exotic fruits (mango, pineapple, kiwi)
- Subtle spicy and smoked tinges.
Taste :
- Frank,
intense and mineral attack
- One can find back the red fruits mentioned above which reveal the
70% of Pinot Meunier and 30% of Pinot Noir of the blending
- Great, ample and dense presence, which is the result of a short well
led maceration (12 to 16 hours) during the vinification by bleeding
- Finale deliciously peppered and acidulous
- Great length on the palate.
The asserted and passionate
personality –rare for a Rosé Champagne- of this Blending Aphrodite of the
Champagne J.M. Teissier conveys the undisputed know-how of Jacques Tissier, its
maker.
To be served with the aperitif together with Parma ham but above all, along the meal to go with fine cooked pork meats, grilled meats or why not with a red fruits dessert such as a raspberry cake.
