Settled in
a 5-hectare vineyard, the family Tissier participates in the expression of the
beautiful terroir of Chavot-Courcourt, respecting the great Champagne
traditions, since 1931.
Original
and luxury packaging. The name is evocative of the Greek mythology of which the
family Tissier is fond of.

Nose:

Intense and charming, it immediately provides pleasant
sensations

Red fruit aromas dominate, on blackcurrant, raspberry,
strawberry jam and kirsch, accompanied with spices (pepper and cinnamon),
result of the 50% Pinot Meunier
·
Patience is rewarded as delicate hints of stewed appel
and pear appear, expression of the 50% of Chardonnay, harvested at full
ripeness on a plot of old vines, in the locality "les Crayons", in
Chavot-Courtcourt
Palate:

Pure first taste thanks to the rigorous selection of
the first juices (cuvée) during the pressing of the grapes and an appropriate
dosage of the bottles at disgorgement, with 8g per liter of sugars added
·
Beautiful minerality, genuine guiding principle of the
tasting
·
The palate swiftly unveils a smooth and warm
roundness, result of a judicious fulfillment of the malolactic fermentation and
of the long aging on laths (6 years) of the bottles before disgorgement,
perfectly controlled by its maker

Delicious bitter and spicy finish, supported by a
dense sparkling
· Very good length in the mouth
This cuvée
Apollon Vintage 2005 by Champagne J. M. Tissier, beautiful interpretation of
the year 2005 and of the terroir of Chavot-Courcourt where the grapes come
from, expresses a real personnality, thanks to a rigorous viticulture and
oenology.
To enjoy
for the aperitif, but especially during a meal shared with friends, to
accompany white meat or poultry.
