Guide VERON des Champagnes 2012

Located
in Louvois, in the heart of the Reims Mountain on a 9,5 hectares vineyard which
yields 75% of Pinot Noir and 25% of Chardonnay, the Champagne Guy de Chassey has
been vinifying high quality blendings for some generations.
The presentation of this Champagne is classical.
Appearance :
- Golden yellow
- Festive sparkling
- Delicate Cordon
Aroma :
- Full-bodied and hearty it discloses straightaway
a great complexity
- Delicious tinges of butter, brioche, buns and roasted coffee
peppered with red fruits (blackcurrant, raspberry and brandy cherry). This
expresses the great maturity of this blending, result of a patient
well-mastered ageing on lath
- Development towards sensuous overtones of cocoa and caramel
- Late appearance of citrus, apricot and raisins
Taste :
- Fresh and dense attack obtained thanks to the
judicious stuck of the malolactic fermentation and to the 50% of
Chardonnay in the blending
- The mouth then develops an open powerful and concentrated roundness
which translates the 50% of Pinot Noir originated from the Grands Crus
terroirs of the Reims
- Deliciously peppered finale
- Outstanding length on the palate.
This blending Brut Vintage 2002 –
Grand Cru expresses all the know-how of the Champagne Guy de Chassey.
To be served with the aperitif but also all along the meal with a lobster chicken fricassée.
