Guide VERON des Champagnes 2012
(around 20 euros per bottle)
The
Champagne Gallimard, Wine grower at the Riceys, has been elaborating his
Champagne on a 10 hectares vineyard for 5 generations in line with the
principles of the tradition and modern oenology
The presentation of this Champagne
is original and luxurious. It is a real success.
Appearance :
- Light yellow with green
flashes
- Fine and numerous bubbles
- Refined Cordon
- Clear and brilliant
Aroma :
- Gorgeous expression of the Chardonnay which is the sole grape
variety of this open, sharp and elegant
- Aromatic anthology, butter and brioche-based, expression of the great maturity of the
blending obtained by a well-mastered ageing on lath
- Discreet woodiness with a touch of vanilla, result of an ageing in
oak barrels of 228 liters of mixed wines originated from Chassagne
Montrachet
- Delicate tinges of citrus and hazelnut.
Taste :
- Lively attack, particularly mineral and precise
which translates a judiciously low dosage
- Festive sparkling
- Pleasant citrus overtones (lemon, grapefruit), of pears and exotic
fruits in keeping with a refined oakiness
- Great length on the palate.
The touching personality of this
Blending Quintessence of the Champagne Gallimard Father & Sons expresses
all the know-how of soil revealing of its maker, Didier Gallimard.
Ideal for an aperitif. It will wonderfully harmonize with a fish carpaccio or a seafood dish.
