Organic champagne
Francis Boulard and his daughter Daphne produce Champagne of wine growers with distinctive personality resolutely focused on organic and biodynamic wine growing and production, from their 3 hectares of parcelled vineyards of 35 years and older, consisting of 30% Chardonnay, 30% Pinot Noir and 40% Pinot Meunier. These are mainly located in the Petite Montagne de Reims area, in Cormicy, in Massif de Saint-Thierry.

Nose :

Stunning intensity, rich and complex, a wonderful
expression of the superb ripeness of the Chardonnay at harvest, sole varietal
of this Cuvée, originating from
Burgundy and obtained from missal selection

Delicious aromas of caramel, brioche and toasted hazelnut,
the result of lengthy ageing sur lattes of the bottles before
disgorgement

Notes of candied citrus fruit, apple and pear, subtly
minty, almost iodate

Magnificent woody notes, just the right amount, with
vanilla and roasted hints
Palate :
- Gentle
and creamy attack, swiftly completed by a pure and lively minerality
- Caressing
effervescence, together with ample roundness, a superb surprise for this
Champagne Brut Nature (with no sugar added at the dosage), the result of
good vinification and above all ageing in old oak barrels (12 years and
more), on the yeast lees, with bâtonnage
- Deliciously
acidulous finish, with apple and pear, enhanced by a delicate bitterness
- Remarkable length on the palate
With this Cuvée les Rachais 2006 Brut Nature, Francis Boulard presents unforgettable Champagne, but equally, a great wine, with exceptional density and complexity, a beautiful interpretation of the silica and calcareous terroir of the 43 year old Hurtebise – Les Rachais plot, farmed using a biodynamic method and according to the lunar calendar, the grapes are obtained solely from this plot. A due reward for respectful and environmentally friendly wine-growing and meticulous oenology, with minimum sulphur dioxide treatment and alcoholic fermentation with indigenous yeasts.
While it delivers rare pleasure as an aperitif, it is
above all a dinner Champagne, ideal with cooked fish and poultry dishes.
