Located in Venteuil in the heart of the Marne Valley since 1789, the Dubois family has passionately cultivated 7 hectares of vineyard, with respect for the environment, and producing quality Champagne.

Complex and generous, instantly delivering an alluring
and charming aromatic spectrum

Aromas of plum, prune, sour cherry and kirsch, thanks
to the 50% Pinot Noir

Delicate nuances of walnut, hazelnut, apple, pear,
candied citrus fruit, apricot and raisin, characteristic of the 50% Chardonnay
·
The nose therefore becomes rich, marked by honey and
spiced bread, combined with unlikely notes of pineapple and fig jam, before
revealing a particular woody note, spices (pepper, cinnamon, liquorice) and
roasted hint, obtained by ageing the base wines in the barrel for 11 months,
perfectly mastered

Delicious aromas of brioche, toasted bread and
pastries, an expression of the great maturity of this Champagne, the result of
patient ageing sur lattes of the bottles before disgorgement

Fresh and mineral attack

The palate is then particularly delicious and smooth,
with a dominant note of honey, with subtle woody notes

Aromas of apple and pear compote

Nuances of spices, enriched by a restrained and
elegant effervescence

Deliciously acidulous finish, of citrus fruit

Very good length on the palate
With this Cuvée du Rédempteur 2000, Claudy Dubois-Michaux, the producer presents a superb interpretation of the 2000 vintage, bringing out the quintessence.
Drink as an aperitif, or why not, during a celebratory
meal, with warm goat’s cheese canapés drizzled in honey.
