Mythical Champagne 

 

The Drappier House who settled in Urville in the heart of the Côte of the Bar has been growing since 1808 a 40 hectares carefully selected vineyard which is made of 70% of Pinot Noir, 15% of Chardonnay and 15% of Pinot Meunier.

Its name calls to mind, the one of a plot covered with ashes after the fire which devastated Urville in 1838. The spelling mistake has been deliberately kept.

 

The presentation of this Champagne is sober, original and luxurious. The beautiful flask has a generous shape, it is a copy of a bottle from the 18th century which was found in the cellar of the House.

 

Appearance :


·        Golden yellow with green reflections

·        Fine bubbles

·        Refined and persistent Cordon.

 

Aroma :


·        Open and sensuous, uncommon complexity

·        First voluptuous nose on brioche and buns, expression of the great maturity of this Champagne obtained by a long ageing on lath, thus allowing the autolysis of the yeast of the « prise de mousse ». This process is perfectly mastered by the oenologist and cellar Master of the Drappier Champagne, Guillaume Roffiaen

·        Delicate oakiness, deliciously smoked on vanilla and cinnamon, result of the vinification of part of the base wines and of the maturing of the sending liquor in oak barrels

·        Delicious overtones of hazelnut, almond, pear and apple peppered with citrus and white flowers thanks to the 45% of Chardonnay in the blending

·        Patience is rewarded by the opening on honey, candied exotic fruits, apricot and raisin peppered with a touch of roasted coffee and cocoa.

 

Taste :


·        Frank and mineral attack all along the tasting, result of a strict selection of the first press juices and of a low dosage at the disgorging (7 g/L of  sugar added)

·        The mouth then discloses a gentle and deep roundness, creamy and tender thanks to the 45% of Pinot Noir stemming from old vineyards

·        One can find again the oakiness in consistency with the nose

·        Slightly acid end of mouth on honey and caramel

·        Fantastic length on the palate.

 

This Blending Grande Sendrée 2004 of the Drappier Champagne brings his taster rare and unforgettable sensations which reveal an unlikely balance between vividness and warmth. It rewards a quality approach to viti-viniculture : selection of the plots, careful manual harvesting, runoff of the must by gravity to avoid oxidation, minimum sulphiting

 

It is resolutely a Champagne meant for gastronomic meals, natural and genuine. It will happily accompany your seafood dishes or why not a fried foie gras tournedos.
