Situated in Urville since 1808, in the heart of the Côte des Bar, the Champagne House of Drappier cultivates over 75 hectares of carefully selected vineyards, scattered over the terroir of Urville, Bergères, Bouzy, Ambonnay, Mareuil-Sur-Aÿ, Pierry, Cramant and Arrentières and consisting of 70% Pinot Noir, 15% Chardonnay and 15% Pinot Meunier. The house produces and sells around 1.5 million bottles of Champagne each year.
A
classic and well-conceived look for this bottle from the "Millésimes anciens"
collection with a golden yellow label. The disgorgement date shown on the label,
guarantees the rather lengthy period before the expédition, a gauge of
its optimum quality.
Appearance :

Intense gold, reflecting the great maturity of this cuvée,
but also reminiscent of Champagnes of long ago

Generous and full, pleasing the taster from the outset

The opening highlights aromas of apple, pear, walnut
and hazelnut, combined with slight woody notes, subtly of vanilla, the result
of a liqueur d’expédition carefully aged in barrels, used to dose the
bottles at disgorgement
The bouquet then reveals a vast aromatic spectrum, with aromas of apple, beeswax, butter, brioche, pastries and caramel, delicately toasted and a wonderful expression of the autolysis of the prise de mousse yeasts during the lengthy ageing sur lattes, at 12°C, in the cellars of the Champagne House built in the 12th century by the monks of Clairvaux

Fresh attack, deliciously mineral, thanks to a
carefully selected first run wine from the pressing (Cuvée), the finest,
extracted by gravity, without pumping

The palate then reveals a deep, creamy roundness

Revealing the walnut, apple and pear aromas found at
the nose, with raisin and dried apricots and a touch of fresh citrus fruits
from the 7% Chardonnay

Endless, spicy finish, marked by pepper, thanks to the
dominant black grape variety of 90% Pinot Noir and 3% Pinot Meunier
With this Cuvée Carte d’Or – Vintage 1995, Guillaume Roffiaen, Oenologist and Chef de Cave of the Champagne House of Drappier, signs his name to Champagne with great personality, complex and reflecting the 1995 vintage, a result of accurate oenology with a minimal use of sulphur. A superb reward for the great work of Michel Drappier mostly based on organic wine growing. It’s an absolute must have.
Drink as an
aperitif with foie gras canapés, or with gourmet meals with fish, Chaource
cheese or a dessert, such as coconut cake and exotic fruits.
