Guide VERON des Champagnes 2013
(24 Euros
per bottle)
The Cooperative of Passy-Grigny, extending over
120 hectares of vineyard, produces superb Champagne, characteristic of the terroir
of the Marne Valley.
An original and well-devised bottle, foil wrap and labelling.
Appearance
:
·
Pale gold
·
Beautifully limpid
·
Fine perlage
·
Fine and persistent bead
Nose :
·
Intense and exuberant, immediately
revealing the winning personality of the Pinot Meunier, the sole vine of this Cuvée
· Rich notes of caramel and brioche together with candied fruits (apple, pear, apricot, ...), and delicate woody notes, with a hint of vanilla, the result of vinification and ageing in 300L Caucasus oak barrels, and bâtonnage of half the base wine
Palate
:
·
Full bodied and delicious, which reflects
the 2006 harvest representing 80% of the blending
·
Unexpected balance between a generous
roundness and liveliness achieved by the timely stop of the malolactic fermentation of the wines briefly aged
in wood, and precise dosage (9g/L of sugar is added at disgorgement)
·
Revealing the caramel and candied fruits perceived at the nose
·
Distinct finish, almost mineral
·
Good length on the palate
With this Cuvée Cornalyne, Nicolas
Corbon, Chef de Cave of the Champagne House of Dom Caudron, signs his
name to superbly exciting Champagne, a wonderful expression of the noble terroir
of Passy-Grigny.
An ideal aperitif, delicious with
chicken supreme and crunchy vegetables or apple pie.
