Settled in Avize in the heart of the vineyards of the Côte des Blancs, Erick de Sousa grows his vintage grapes on a 10 hectares parcel of land following strict biologic and biodynamic viticulture principles.
Subdued ,yet luxurious in its presentation, bottled with an exquisite label in relief, this champagne results from a blending of 50% Chardonnay and 50% Pinot Noir from Aÿ which takes place in the press.
Appearance :
- Intense gold hue reflective of the maturity of
the grapes from 2002.
- Finely bubbled
- Tight and persistent Cordon
Aroma :
- Inviting, generous and sensuous. Elusive and constantly evolving.
- Intense first nose of honey, caramel and spices.
A testament to the wine-making and the 6-7 months of ageing in oak barrels
out of which 15% are new.
- Evolves towards a scent of roasted coffee,
toasted bread and cocoa tones thanks to a long ageing on a lath
- For the patient taster, a reward by the emergence of walnut, almond, hazelnut and exotic fruits.
