Mythical Champagne
Situated in Avize, in the heart of the vineyards of the
Côte des blancs, Erick De Sousa cultivates his 10 hectares of ancient vines
according to organic and biodynamic farming principles. The environmentally
friendly method and terroir are values he will hand down to his children.

Mysterious and radiant at the same time, grabbing the
taster’s attention

A spring-like and floral opening, enriched by delicate
woody notes, subtly smoked and roasted, obtained by the vinification and ageing
the base wines for 6-7 months in 225L oak barrels (a portion of which is in new
barrels) with bâtonnage
·
The nose then reveals rare and moving complexity,
consisting of nuances of fig, raisin and dried apricot, candied citrus fruit,
butter and caramel, an expression of the excellent maturity of this Cuvée,
a result of the lengthy ageing sur lattes of the bottles for 4 years,
before disgorgement
· Left to breathe, you are rewarded with alluring notes of underwood and mushrooms
Palate :

Lively attack, dense and deep at the same time, pure
and mineral, thanks to an intentionally low dosage of sugar 3.5g/L at
disgorgement, a fabulous expression of the Chardonnay from ancient vines over
50 years old, the sole varietal of this Champagne, cultivated with rigour and precision
on the noble Grand Cru terroir of the Côte des Blancs (mainly in Avize and
Oger)

Splendid aromas of fresh citrus fruits (lemon,
grapefruit)

Deliciously lengthy finish, fondant-like and acidulous
at the same time
· Exceptional length on the palate
This Cuvée Caudalies 2004, with
exceptional vitality, is a brilliant compromise between intensity and finesse,
once again reveals all the talent of Erick De Sousa in revealing these terroir.
A reward for his precise and meticulous approach, based on biodynamic farming,
vineyard management and a deep-rooted respect for wine (without filtration, lengthy
periods between disgorgement and marketing).
Equally good on its own as an
aperitif, ideal with gourmet meals, for example with smoked salmon.
