Guide VERON des Champagnes 2012

The
winegrowers’ coop of Champagne wines (CRVC) is established in Reims on a 5
hectares production site. With a capacity of some 29 million bottles, it has
been carrying on the know-how of the prestigious brand De Castelnau since 2003.
Its
presentation is festive and traditional.

The first nose marked by sensuous overtones of
brioche, honey, beeswax and buns, is the immediate expression of the maturity
of the blending which has been obtained by a long ageing on lath associated
with a tuned up autolysis of the yeast of
the “prise de mousse”, perfectly mastered by the
maker, Richard Dailly

The bouquet then slowly develops to disclose fine
tinges of crystallized citrus, hazelnut and fresh butter
Taste :
·
Frank and straight attack, mineral and refreshing,
astonishing for a Champagne of that vintage and which reminds us the dominance
of the 50% of Chardonnay in the blending, supported by a sparkling tonic
·
The mouth then develops towards a hearty and tender
roundness, thus giving some deepness, nicely peppered, expression of the
blending : 20% of Pinot Noir and 30% of Pinot Meunier
· Lively final, deliciously bitter, with a grapefruit and apple dominant characteristic. Long on the palate
With this Brut blending– Vintage 2000, the De Castelnau Champagne promises to be a prestigious Champagne. Ideal for an aperitif or a festive meal.
