Aspect: Gold, coupled with emerald glints. Fine and regular effervescence. Nose: Sensual and touching. The Chardonnay, exclusive varietal of the cuvée, takes us into an outstanding aromatic
whirl, between white fruits compote, citrus fruits, almond and hazelnut
delicately roasted, enhanced by an iodized and mentholated breath. |
Palate: The delicious purity of the attack, obtained by the timely stop of the
malolactic fermentation of the base wines and by the adjusted dosage with
only 6 g/L of sugar added at disgorgement, unveils a generous
gentleness, revelation of the long ageing of the bottles on laths (9 years). With this Blanc de Blancs, Michel Rozeaux, cellar master of
the Champagne house Charles Ellner, offers us an inspired interpretation of
the Chardonnay. |
