Mythical Champagne
The Champagne
House Bollinger located in Aÿ was founded in 1829 and produces two million
bottles of Champagne each year.
Bollinger Champagnes are unique in the industry and distinguished by their luxury presentation.
Appearance :
- Intense golden yellow

Aroma :
- Enchanting and strong, bringing a rare pleasure to the nose
- Initially distinguished by a sensuous tinge of coffee roasting and
bun, over-laden with scents of caramel and spices (pepper, cinnamon, vanilla)
the wonderful result of long ageing on lath in bottles traditionally
corked with staples.
- The following experience is one of unsurpassed complexity and
elegance, the result of a careful blend of 60% Pinot Noir and 40% of Chardonnay
and originating from 17 Grands Crus and Premier Crus.
- Finishing with the scent of a fabulous medley of red fruits, plum, apple, cherry brandy, apricot, dry grapes, almond, hazelnut, walnut and a host of exotic fruits.
Taste :
- An initial experience to the palate, both distinct and precise, the result of a rigorous selection of the first juice (cuvée) at the initial grape pressing stage delicately and judiciously moderated by the addition of 8g/l of added sugar after the grapes are disgorged and overall supported by cushy and smooth bubbles.
- The next sensation reveals a robust and generous roundness of
impressive range reinforced by the delicious overtones of wood, all the
impressive expression of an ageing vinification in vintage 20 year old
barrels. A process well mastered allowing a gentle oxidation and with a
significant ageing capacity.
- Finally a warm and subtly spicy taste sensation
- Sustaining an endless length of pleasure on the palate
With their amazing year 2002, Mathiew Kauffmann, the Cellar Chief of the Bollinger Champagne House, offers a “to be tasted” Champagne of rare and great richness as an indicative picture of this marvelous 2002 vintage. Created with a purist respect for true champagne making traditions, this blending still young is mixed manually from disgorged grapes and takes maximum advantage of long periods between dosage and shipping leading the excellence of the “Bollinger Style”.
This is champagne of distinction to be savored as an aperitif or served with a splendid gastronomic concoction such as a grilled trout with thyme, roasted Orloff veal or a fitting tribute to a tarte tatin.
