Mythical Champagne
Founded
in 1834, the Champagne House of Boizel produces around 500,000 bottles a year
of great Champagnes in Epernay, half of which is exported. Although incorporated
in the Boizel – Chanoine – Champagne group, it preserves a decidedly family vocation.

Extraordinary aromatic spectrum, elusive, swaying
between improbable scents of damp underwood, and a more clear woody note,
alluring, accompanied by a delicate hint of vanilla, the result of vinification
of base wines in old barrels, according to the traditional champenois
method
· Developing an impressive complexity, an expression of the great maturity of the 40% Chardonnay from the Côte des Blancs (Chouilly, Vertus and Cramant), 50% Pinot Noir from the Mountains of Reims (Aÿ, Mailly and Mareuil sur Aÿ) and 10% Pinot Meunier from Chigny les Roses, mingling aromas of wild strawberry jam, caramel, toasted bread, fig, mint, cinnamon, rose, white flowers and peach

Swiftly reveals a robust and caressing roundness, bolstered
by a delicate effervescence

A slow and progressive build-up, enveloping, enriched by
notes of cocoa, roasted coffee, the result of lengthy ageing sur lattes

Intense and delicious finish, invigorated by a intentionally
light dosage (5g/L of sugar is added at disgorgement)

With this Cuvée Sous Bois 2000, Christophe Roques-Boizel, Chef de Cave of the Champagne House of Boizel, signs his name to superb unforgettable Champagne, characterised by harmony that fills you with joy.
Although superb with gourmet meals, it is equally as
delicious as an aperitif.
