Great independent Champagne
house, the Champagne Taittinger chaired by Pierre-Emmanuel Taittinger since
2006, relies on its vineyard of 288 hectares planted with vines stemming from massal selection, cultivated with the greatest respect
for the environment, to develop and market fine and elegant Champagnes, with a
great part of Chardonnay.
Luxurious and original
presentation.
Visual aspect:

Golden, bright, with discreet green tinges.

Very fine bubbles.
·
Elegant bead of bubbles.
Nose:
·
Intense and captivating.
·
Rare maturity, with sensual aromas of fresh butter, caramel, toast,
evolving towards roasted coffee, result of the patient ageing on laths (6
years) in the chalk cellars of Saint-Nicaise, with autolysis of the
fermentation yeast.

The nose unveils all its complexity in a harmonious movement, with scents
of apple, pear and chrystallised lemon, abricot and raisins, barely iodized,
signatures of the Chardonnay, exclusive varietal of the cuvee.
· The patience is rewarded by the apparition of a hint of vanilla, certainly due to the maturing in new oak barrels of 5 % of the base wines for 4 months.
Palate:

Racy and dense first taste, enabled by the meticulous
selection of the first juices, purer, at the pressing (cuvée), marked by an
amazing minerality which accompanies us throughout the tasting, the signature
of the Grand Crus of the Côte des Blancs, unique origin of the grapes.

Then the palate reveals a
rare presence, with a refined effervescence.

To taste for the aperitif with foie gras toasts, or during a gastronomic meal, to accompany a roasted pigeon, for example.
