Located in Passy sur Marne, in
the heart of the Marne Valley, Martine and Pascal Serveaux, together with their
children, passionately cultivate 13 hectares of vineyard planted with three champenois
varietals.
A luxurious

Appearance :

Coppery, intense, the result of using the Rosé de
Saignée method, with short maceration (24 to 36 hours) of the 60% Pinot
Meunier and 40% Pinot Noir, completely destemmed and carefully selected on a
grading table

Fine perlage

Clearly defined, persistent bead of bubbles

Bright

Complex and tempting
·
Initially dominated by fresh red fruits (blackcurrant,
strawberry, cherry, raspberry and redcurrant), thanks to the exclusive
selection of free run wine during racking
· Delicate notes of citrus fruits mingling with subtle aromas of spices (pepper, cinnamon), together with a hint of cocoa and caramel almost roasted, the result of lengthy ageing sur lattes of the bottles before disgorgement (30 months)
Palate :

A lively attack, almost mineral, bolstered by a
precise stop of the malolactic fermentation of the base wines obtained from
Pinot Meunier

The palate then develops a creamy roundness
·
Acidulous finish, with a delicious almondy taste
·
Good length on the palate
With this Rosé de Saignée, Pascal Serveaux and his son Nicolas present Champagne rosé with great expression, delivering a beautiful image of the terroir of Passy sur Marne
Drink as an aperitif with a smoked salmon verrine, or during a meal to accompany a grilled beef cutlet.
