Settled in Cuis, in the Côte des
Blancs since 1950, the Champagne Pierre Gimonnet et Fils grows with passion its
28-hectare vineyard, consisting of old vineyards planted with Chardonnay Grand
Crus (40%: Cramant, Chouilly and Oger) and Premier Crus, to produce 260,000 bottles
of Champagnes every year, variations inspired by purity and elegance.

Visual
Aspect:

Pale
pink, salmon-pink.
·
Very fine bubbles.
·
Fine and persistent bead of bubbles.
Nose:
·
At
first subtle, it gradually reveals its harmonious aromatic universe, thanks to
the respect of long periods between disgorgement and shipping (3 months).
·
Delicate
scents of fresh red and black fruits (blackcurrant, raspberry, cherry and
blackberry), joyful expressions of the 10% of red wines of Pinot Noir from
Bouzy (Grand Cru), converted into wine with complete destemming to avoid
tannins.
·
The
Chardonnay (90%), exclusive grape variety of the white base wine, then reveals
a beautiful complexity, made of notes of lemon, grapefruit, apple, pear, white
flowers and fresh mint.
Palate:
·
Refreshing
first taste, thanks to the adjusted dosage with only 6 g/L of sugar added at disgorgement,
supported by the striking minerality of the Côte des Blancs (Chouilly, Cramant,
Oger and Cuis).
·
The
palate then becomes soft and warm, maybe thanks to the sensible malolactic
fermentation of the base wines, supported by a sensual effervescence.

Delicious
finish with nuances of citrus fruits.
·
Great
length.
With this Rosé de Blancs Brut
Premier Cru, Olivier and Didier Gimonnet, its producers, dared to set their enological
know-how in the service of a pinch of imaginativeness, to better sublimate
better the grand Chardonnays selected in 2011.
To enjoy for the aperitif with
toasts of salmon, or during the meal, to accompany a beautiful grilled sole,
for example.
