Guide VERON des Champagnes 2015
(approximately 121 euros a bottle)
Mythical Champagne
Owner of a 20-hectare vineyard, of which the 5.5-hectare Clos des Goisses, the Champagne Philipponnat has just obtained the HEV label (High Environmental Value) which comes to reward a responsible, eco-friendly vinification and oenological approach (weeding without weed-killer, with a tractor or a horse).
Elegant presentation. Symbolic bottle of the brand.
Visual Aspect:
·
Golden, bright.
·
Very fine bubbles.
·
Discreet bead of bubbles.
Nose:
·
Blooming,
thanks to long periods between the disgorgement (date indicated on the back
label: February 2013) and the shipping, it proposes us a rich and harmonious
aromatic journey.
·
Aromas
of honey evolving towards chocolate and roasted coffee, the translations of the
perfect maturity of the Champagne obtained by eight years of ageing on laths of
the corked bottles.
·
Scents
of red berries, expressions of the Pinot Noir (65%) harvested very ripe thanks
to the southern exposure of the Clos, supported by a subtle woodiness, result
of the vinification and élevage of 50% of the base wines in 1 to 6-year-old oak
barrels.
·
The
Chardonnay (35%) unveils at last, with notes of apple and pear compote, of
white flowers and citrus.
Palate:
·
The
first taste shows itself intense and pure straightaway, strengthened by the judicious
stop of the malolactic fermentation of the base wines, supported by the
particular, slightly iodized minerality of the chalky soil of the Clos des Goisses
on which the best base wines have been strictly selected during the blending tastings.
·
The
palate then becomes deep.
·
Amazing length.
With this Clos des Goisses 2004, Thierry Garnier, the cellar master of the Champagne
Philipponnat, offers us a Champagne that has an exceptional vital force, a
vibrant tribute to the exceptional terroir it stems from.
To enjoy during a gastronomic meal,
to accompany a supreme of truffled fattened chicken, for example.
