Fourth generation of winegrowers, settled at Bouzy in the heart of the Montagne de Reims, the Champagne Maurice Vesselle grows its 7.5-hectare vineyard in the greatest respect for the environment (high environmental value and Qualenvi certification). The domain crafts and markets 60,000 bottles of Champagnes of characters every year.
Sober, original and luxurious presentation.
Visual aspect:

Golden, intense and gleaming.

Particularly fine bubbles.

Discreet ring of bubbles.
Nose:
·
Blooming
first nose, it progressively reveals all its richness.
·
Cherring
maturity, result of 12 years of ageing on laths of the bottles before
disgorgement, with warm scents of caramel, honey, beeswax, evolving towards roasted
coffee.
·
Later, the Pinot
Noir (80%) expresses with aromas of red fruits, cherries in brandy and delicate
spices (cinnamon and white pepper).

Discreet
shades of chrystallised citrus, apple, almond and chestnut, slightly salty,
signatures of the Chardonnay (20%).
Palate:

Pure first taste, thanks to the judicious blocking of the malolactic
fermentation of the base wines, with a minerality that accompanies us
throughout the tasting, marked by the terroirs of origin of the grapes (Bouzy
and Tours-sur-Marne).
· Then the palate becomes warm, well-balanced and dense,
maybe thanks to the careful work of the clayey and chalky soils (plowings,
earthing up and down) which forces the roots to go deep in the ground.

Very great length on the palate.
This Millésimé 2000
Grand Cru rewards the know-how of Didier and Thierry Vesselle, its producers,
who managed to implement a soft and respectful enology, to offer us a
remarkable Champagne.
To taste for the aperitif, or during your meals, to accompany roasted back of seabass with coconut milk and lime, for example.
