Champagne Jean Michel – Cuvée Les Mulottes – Collection 2004

Wine grower at Moussy, the Champagne Jean Michel, certified of High Environmental Value, grows its 12-hectare vineyard settled on the south hillsides of Epernay and in the Marne valley, in the greatest respect for the environment (80% of the surface is covered with grass and 20% is ploughed). It practises a precise and soft enology, to produce and market 60,000 bottles of Champagnes of character every year.

 

Original and luxurious presentation, in a wooden case. Date of disgorgement indicated on the back label (in October, 2013).

 

Visual Aspect: 

 

·        Golden, shimmering.

·        Fine bubbles.

·        Discreet bead of bubbles.

 

Nose:

 

·        Blooming and complex, thanks to the realization of the alcoholic fermentation of the base wines by indigenous yeasts.

·        Accomplished maturity, with warm nuances of caramel and honey, slightyl roasted, obtained thanks to 8 years of ageing on laths of the bottles before disgorgement.

·        Sophisticated woodiness, thanks to the vinification of the base wines in oak barrels made by Jérôme Viard (artisanal cooperage of Champagne-Ardennes).

·        The Chardonnay, the exclusive grape variety of the cuvée, unveils at least, with flavours of lime, bitter almond, hazelnut, apricot and raisins, delicately mentholated.

 

Palate:

 

·       Ample, deep and warm first taste, thanks to the élevage of the base wines on lees of yeasts with stirring every month, backed by a striking minerality, a signature of the terroir of Pierry, unique origin of the grapes stemming from the plot Marie les Mulottes.

·       Caressing effervescence.

·       Refreshing finish due to the sensible blocking of the malolactic fermentation of the base wines.

·       Remarkable length.

 

With this cuvee Les Mulottes - Collection 2004, Olivier Michel, its maker, offers us a highly expressive Champagne, beautiful award for its wine-making and enological know-how.

 

To enjoy during a meal, to accompany a roasted poultry of Bresse, for example.
