Family house in Mesneux since 3
generations, the domain Jacquinet-Dumez grows its 7-hectare vineyard, consisting
of 25 plots of vines aged 40 years old on average, shared between the Premier
Cru of Mesneux, Sacy, Ecueil and Villedommange, in the Montagne de Reims.
Fascinated and sincere in his approach, Olivier Jacquinet produces and markets
every year approximately 70,000 bottles of Champagnes of character.

Visual Aspect:

bead of bubbles, persistent.
Nose:
·
Sensual
and subtle.
·
Sometimes
marked by the scents of citrus fruits, very ripe apple and pear, moving
signatures of the Chardonnay, the exclusive grape variety of the vintage,
underlined by the discreet woodiness, result of the vinification and élevage
(with 5 to 6 stirrings) of the base wines in oak barrels of 4 to 5 wines,
bought in Burgundy.

Sometimes
dominated by the blooming aromas of honey and gingerbread, evolving towards
nuances of roasted coffee, expressions of the accomplished maturity of the Champagne
obtained by 6 years of ageing on laths of the bottles before disgorgement.
Palate:
·
Pure
first taste, with a rare tension, allowed by the selection of the first juices
during the pressing of the grapes and by the adjusted dosage with only 5 g/L of
sugar added at disgorgement.

The
palate then becomes smooth, backed by the tonic effervescence.
·
Delicious finish, slightly spicy.
·
Great
length.
With this confidential cuvee Agathe
2006 Premier Cru (1,500 bottles), Olivier Jacquinet, its producer, managed to
implement a soft and creative enology, without cold, neither sticking, nor filtering,
in the service of the Chardonnay selected on the plot Les Croisettes, at Sacy,
to offer us a Champagne of character.
To enjoyin for the aperitif, or
during a meal, with special fattened oysters with celery, for example.
