The Champagne House of Gallimard has produced Champagne for 5 generations using grapes from its 10 hectares of south facing vineyard in the terroir of Les Riceys, with due regard to traditions and the modern art of wine making.

Mature and mouth-watering, immediately revealing great
complexity, a source of intense pleasure

Initially elegant, with notes of fresh citrus fruits,
apple, pear, peach and apricot, a good expression of the 35% Chardonnay

Becoming more mighty, with hints of plum combined with
gentle notes of pepper and cinnamon, distinctive characters of the 65% Pinot
Noir, obtained from a careful selection from old vineyards (40 to 50 years old)
· Finally, delicate buttery notes, brioche-like, almost roasted combined with caramel and honey, expressed by the great maturity of this Champagne, obtained with perfectly controlled lengthy ageing sur lattes of the bottles (5 years)
Palate :
- Good
balance between an elegant and mineral freshness throughout the tasting
and a full and generous range, the result of accurate malolactic
fermentation and precise dosage with 10g/L of sugar added at disgorgement
- A gentle,
creamy effervescence underlined by scents of fruit compote
- Deliciously
acidulous finish, with a honey-like roundness, almost toasted
- Remarkable length on the palate
With this Cuvée Prestige Millésime 2006, its producer Didier Gallimard signs Champagne with great vitality, an excellent interpretation of the 2006 vintage, confirming the great potential of the Les Riceys terroir, the sole origin of the Pinot Noir and also Chardonnay grapes.
Drink as an
aperitif, with rolls of cheese stuffed salmon, or during a meal to accompany
Bresse chicken with morel mushrooms and cream.
