Organic Champagne
Third generation of winegrowers at Crouttes-sur-Marne, the Champagne Françoise Bedel grows its vineyard of 8.40 hectares in biodynamic farming (certified by AB and Biodyvin), in the greatest respect for the soils, to produce approximately 50,000 bottles of authentic Champagnes every year.
Luxurious and original presentation.
Visual aspect:

Golden, deep and gleaming.

Nose:
·
Blooming,
thanks to the respect of a long time between disgorgement and shipping.
·
Straightaway
marked by the Pinot Meunier (67%) and the Pinot Noir (17%), with scents of
chrystallised red fruits and kirsh, with delicate spices.
·
Dellifghtful
maturity, with aromas of dark chocolate and roasted coffee, results of a long
ageing on laths of the bottles (8 years), complemented with a mastered woody
side, obtained with the vinification in oak barrel from 5 to 10 years of more
than 70 % of the base wines.

Patience
reveals a subtly mentholated side, accompanied by notes of apple and pear
compote, due to the 16% of Chardonnay.
Palate:

Striking purity and refreshing minerality, marked by the
clayey and marno-calcareous soils, underlined by an adjusted dosage with only 3g/L
of sugar added at disgorgement.

Then the palate develops a sensual depth, expression
of old vines (20 to 60 years old) on which the grapes have been selected,
reinforced by the judicious realization of the malolactic fermentation on the base
wines.

Good length on the palate.
With this cuvée L’Âme de la Terre – Millésime 2003 – Extra Brut, Vincent Desaubeau, winegrower, managed thanks to biodynamics to preserve the freshness of the soil of Crouttes-sur-Marne to sublimate this very contrasting year 2003 (strong frost in spring and heatwave).
To taste during a meal, to match with a millefeuille of fillet of beef with yellow wine, for example.
