Guide VERON des Champagnes 2013
(around 19 Euros per bottle)
Founded in 1931 in Chavot-Courcourt, the Champagne House of Diogène Tissier & Fils cultivates 9 hectares of vineyard and passionately produces quality Champagne, obtained by carefully selecting grapes from three champenois varietals (56% Chardonnay, 37% Pinot Meunier and 7% Pinot Noir), with due regard to tradition.
An original look, merry and luxurious, in a bottle of generous proportions.
Appearance :
- Intense
gold
- Fine perlage
- Delicate
bead of bubbles
- Bright
Nose :
- Generous
and alluring
- Toasted
and brioche-like, with subtle notes of toasted bread, an expression of the
great maturity of the cuvée, a result of the yeast autolysis during
the lengthy ageing sur lattes of the bottles (5 years), before the
riddling and disgorgement
- Generous
woody notes combined with fine spices (vanilla, cinnamon), obtained by
ageing 60% of the base wines in oak barrels during the 6 months prior to
blending
- The nose therefore reveals delicate hints of honey and beeswax, together with walnut, hazelnut, raisin, apricot and prunes.
Palate :
- Marked
attack, thanks to the meticulous selection of the cuvée (obtained
exclusively from free run wine), and livelier as the grapes are pressed in
a traditional 400Kg Coquard press at the house
- The
palate reveals sweet harmony, voluminous and round, thanks to the regular bâtonnage
(every 10 days) during ageing of the base wines in barrels, good
expression of the accurate blending of three champenois varietals:
50% Chardonnay and 25% Pinot Noir, both originating from Barbonne-Fayel
and Sézanne, and 25% Pinot Meunier from
Chavot-Courcourt
- Reveals
the beautiful woody notes already perceived at the nose, bolstered by
aromas of brandy, honey, mango and small red fruits.
- Acidulous
finish, with delicious spiciness
- Good length on the palate
Vincent Huber, the producer of this Cuvée Millésime 2005, presents superb Champagne, expressed by the exceptional quality of the grapes harvested that year. A rightful reward for the Champagne House of Diogène Tissier & Fils for their responsible wine growing and producing approach.
Drink as an aperitif or during a meal, to accompany poultry or white meats.
