Guide VERON des Champagnes 2015

On the 1,400 hectares of Union Auboise, mainly located in the Côte des Bar and farmed by 800 winegrowers, 100 hectares of the best plots are reserved to the brand Devaux, established in 1846, to develop and market 650,000 bottles of high-quality Champagnes every year.
Refined and luxurious presentation.
Visual aspect:

Golden, with discreet green tinges.

Very fine bubbles.
·
Delicate bead of bubbles, persistent.
Nose:
·
Sensual and moving.
·
Fragrances of
apricot and raisins, apple, pear, walnut, chestnut, and white flowers, thanks
to the 50% of Chardonnay.
·
Cheering shades of red fruits (raspberry, blackberry and red currant),
thanks to the 50% of Pinot Noir.
· The Champagne finally reveals all its maturity, with warm notes of honey, caramel and gingerbread, obtained thanks to a patient ageing on laths of the bottles (7 years), before riddling and disgorgement.
Palate:

Pure and dense first taste, supported by a beautiful
minerality, swiftly evolving towards a moving balance, obtained by a meticulous
selection of the best plots, a particularly careful pressing (first pressing),
the wise blocking of the malolactic fermentation of 17% of the base wines and
an adjusted dosage with only 6 g/L of sugar added at disgorgement.

Then the palate reveals a warm
fullness, with a creamy effervescence.

Spicy finish and delicately
mentholated (pepper and cinnamon).
· Very great length on the palate.
With this Cuvée D
Millésimé 2005, Michel Parisot, the cellar
master of the Champagne Devaux managed to realise the perfect mix between the Pinot
Noirs of the Côte des Bar (Bergères, Noé-les-Mallets, Fontette and vallée de
l’Arce) and the Grand Crus Chardonnays of Chouilly (Mont Aigu), in the Côte des
Blancs, to deliver us a remarkable interpretation of the year 2005.
To enjoy for the aperitif or during a meal to match with a poultry supreme and sweetbread with boletus sauce, for example.
