since 1838, the Deutz domain relies on its vineyard of about 200 hectares (80%
in Premier and Grand Crus), including 42 self-owned hectares, cultivated with
care, to elaborate and marked Champagnes with an inimitable style.

Visual aspect:

Intense gold, brilliant.

Very fine bubbles.

Discreet and persistent bead of bubbles.
Nose:
·
First mysterious and captivating, it slowly reveals its aromatic universe
with a rare sensuality.
·
Scents of caramel, honey, praline and Viennese pastries, mingling progressively
with notes of chocolate and roasted coffee, expressions of the complete maturity,
obtained by 12 years of ageing on laths of the bottles before disgorgement.

The patience finally reveals all its complexity:
o
The apple, the pear, the mango and the dried apricot, thanks to the 30%
of Chardonnay selected in the Grand Crus of Mesnil-sur-Oger and Avize in the Côte
des Blancs.
o The chrystallised red fruits, delicately spicy, due to the 60% of Pinot Noir from the Grand Crus of Aÿ, Ambonnay, Louvois and Bouzy, as well as Mareuil-sur-Aÿ, and to the 10% of Pinot Meunier coming from Pierry and Venteuil.
Palate:

Ample, generous, almost structured, with a remarkable
minerality and vitality.

Infinite increase in intensity, supported by the
smooth effervescence, leading to a blooming finish, maybe thanks to the
realization of the malolactic fermentation on the base wines.
· Impressive length on the palate.
With this Cuvée William Deutz 2000, the 14th of this cuvee launched in 1961 in tribute to the creator of the house, Michel Davesne, cellar master of the Champagne Deutz, managed to implement a precise and patient enology, to offer us a magnificent interpretation of the 2000 year, in the pure Deutz style.
To taste with a gastronomic meal, with a wild eel fricassee with garlic butter.
