Oldest house of Ludes (1868), in
the Montagne de Reims, integrated into the group Thiénot in 2003, the Champagne
Canard Duchêne implements a resolutely environment-friendly approach since
2004, with in particular the creation of its range of organic Champagnes, to produce
and market more than 4 million bottles of Champagnes of character every year.

Visual
Aspect:

Golden,
with discreet green nuances.

Very fine bubbles.

Nose:
·
Harmonious,
source of intense feelings from the first nose.

Aromas
of very ripe red fruits (cherry, blueberry, blackcurrant), thanks to the domiant
black vines (43% Pinot Noir and 28% Pinot Meunier), complemented by nuances of
apple, pear, white-fleshed peach, apricot and raisins, certainly the signature
of the Chardonnay (29%).
· Later, the Champagne reveals its blooming maturity, with warm scents of honey, caramel, cocoa and roasted coffee, inimitable result of 5 long years of ageing on laths of the bottles before disgorgement, with the patient autolysis of the bottle fermentation yeasts.
Palate:
· Moreish
and rich first taste, thanks to the sensible realization of the malolactic
fermentation of the base wines and the generous dosage with 9 g/L of sugar
added at disgorgement, supported by a lovely minerality, unique mark of the terroirs
of origin of the grapes, mainly selected in Grand Crus and Premier Crus.

Smooth effervescence.

Endless
finish, warm, accompanied by delicate spices (pepper, cinnammon).
· Great length.
With this cuvée Authentic Vintage 2007, Laurent Fédou, the cellar master of the Champagne Canard-Duchêne, managed to make the rifht blend, to offer us a moving interpretation of the vintage 2007.
To enjoy during a meal, to accompany breast of farm chicken with truffle, for example.
