Mythical Champagne
Created at Mareuil-sur-Aÿ in 1818
by Nicolas François Billecart and Elisabeth Salmon, the Champagne
Billecart-Salmon, now represented by François and Antoine Roland-Billecart, marries
traditions of Champagne, enological control and use of barrels (new barrel
cellar since 2010). It relies on its 50-hectare vineyard and a total supply of
grapes of 170 hectare, to craft with passion 1.8 million bottles of great Champagnes
every year, marketed in more than 60 countries.
Original, sober and luxurious
presentation.
Visual Aspect:

Golden hue with discreet green tinges.
·
Very fine bubbles
·
Discreet bead of bubbles.
Nose:
·
Unexpected
and moving marriage of powerfulness and sharpness.
·
Amazing
scents of lemon, grapefruit, apple, hazelnut, inimitable signatures of the very
ripe Chardonnays, carefully selected in the Grand Crus od the Cöte des Blancs (Chouilly,
Avize and Mesnil-sur-Oger).
·
The
maturity of the Champagne then imposes itself, with blooming aromas of honey, of
Viennese pastries and roasted coffee, result of eight years of ageing on laths
of the bottles before disgorgement.
Palate:
·
First
taste of a rare purity, strengthened by the p artial
malolactic fermentation on the base wines, and by the adjusted dosage with only
6 g/l of sugar added during disgorgement.
·
Moving
minerality and delicate woodiness, perfectly integrated, obtained by the
vinification and élevage in oak barrels
of 20% of the base wines.
·
The
palate then becomes fleshy thanks to the regular lees stirring during the élevage
in barrels.

length.
With this cuvee Blanc de Blancs
2004, François Domi, oenologist and cellar master of the Champagne
Billecart-Salmon, managed to catch the purity of the Chardonnays of this year of
late harvest to offer us a vibrating interpretation.
To enjoy during a meal, with a fillet
of turbot and artichokes, for example.
