Aspect: Golden yellow, brilliant. Fine and regular bubbles. Nose: Sensual
and endless. The Chardonnay, exclusive varietal of the cuvée, delicately harvested by hand in
2014 in the plot « Les Vieilles Grand-mères », in Loisy-en-Brie, slowly
reveals all its finesse, with aromas of apple, pear and citrus fruits,
highlighted by a mentholated breath. |
Palate: Heady purity thanks to the timely stop of
the malolactic fermentation of the base wines and to the minimalist dosage
with only 2 g/L of sugar added at disgorgement. The mouth is revealed ample and generous,
expression of the maturity obtained by 3 years of ageing on laths. With this reserved cuvée Solliphere 2014 (3,500 bottles), Alain Gérard, wine
grower, signs a rare champagne. |
