Guide VERON des Champagnes 2015
(approximately 15 euros a bottle)
Since 1983, Champagne Raymond Demière grows with passion his vineyard of approximately 3 hectares mainly established on the Ambonnay Grand Cru, in the Montagne de Reims, to develop and commercialize 12,000 bottles of high quality Champagnes every year.
Classic and luxurious presentation.
Aspect :
·
Nice coppery tints, gleaming.
·
Fine bubble.
·
Bead of persistant bubbles
Nose :
·
At first a
bit timid, the nose has proven quickly pleasing, intense and ample.
·
Marked by
delightful red berries (strawberry, raspberry, blackcurrant and especially cherry),
matching with an improbable shade of violets, the signature of Pinot Noir, in
large majority (100% of red wine and two thirds of white wine).
·
Heady
scents of undergrowth and spices (liquorice and cinnamon).
·
Later, the
nose reveals all the sensivity of the Chardonnay (third of the white wine),with
delicate aromas of apple, pear, citrus (lemon and clementine) and fresh butter.
Palate :
· At first tense and mineral, with seductive signatures
of the terroirs Grand Crus of Verzenay for the red wine, but mainly of Ambonnay,
for the white wine, quickly joined with a fleshy and blooming vinosity, maybe
thanks to the malolactic fermentation and generous dosing with avec 10 g/L of sugar
added at disgorgement.
·
We find the red berries evoked in the nose.
·
Spicy
finish.
· Great length in the mouth.
With this Rosé Grand Cru, producer Patrick Demière signs a traditional blended rosé, with 10% of red wine and 90% of white wine from mainly 2010 (70%) and 2009 (30%) harvests, with a good price-quality ratio.
To enjoy during meals with friends, to accompany roast partridge with honey, lemon and pineapple or with a dessert, like braised pear with blackcurrant sauce, for example.
