Guide VERON des Champagnes 2015(approximately 25 euros)
The champagne Pierre Pinard is the only wine grower to elaborate champagnes exclusively from the beautiful region of Sezanne. Every year, a rigorous selection of the grapes on the 13 hectare vineyard of the estate, cultivated in respect of the environment, allows to make around 20 000 bottles of quality champagnes.
Traditional and luxurious presentation. Elegant and original silver cap, branded with the coat of arms of Sezanne.
Visual
aspect :
- Golden, luminous.
- Festive bubbles of a rare finesse.
- Refined and persistent bead.
Nose :
- Delightful straight away, source of an intense
pleasure.
- Warm aromas of vanilla and croissant, accompanied
by a delicate wooden scent, obtained thanks to the ageing in oak vats (of several wines and
originated from the Burgundy region) of the base wines for a year,
perfectly controlled.
- Beautiful notes of crystallised red fruits
(Morello cherry, blackcurrant and raspberry), expressions of the 70% of
pinot noir.
- The nose then drifts softly towards subtle nuances of almond, hazelnut, apple, dried apricot and above all of citrus fruits, signatures of the 30% of chardonnay.
Palate :
- Balanced and supple, maybe thanks to the judicious
realisation of the malolactic fermentation on the base wines, elevated by
dynamic mineral tension permitted by the precise selection of the first
juices during the pressing of the grapes (cuvee).
- Smooth effervescence particularly persistent.
- We find again the almond, the citrus fruits and
the discreet wooden scent mentioned in the nose.
- Deliciously slightly acid finish, still mineral,
deliciously scented with vanila.
- Very great length in the mouth.
This Cuvee Fut de Chene from Champagne Pierre Pinard demonstrate all the savoir-faire of Jacques Pinard, its producer, who gives us a beautiful interpretation of the Sezanne soil, exclusive origin of the grape harvest mainly harvested in 2007.
To enjoy during the aperitif but also during a meal, to accompany a free range chicken with crystallised lemon, for example.
