For four generations, the champagne Pierre Gerbais puts together a viticulture respectful of the environment (certified AMPELOS since 1996) to cultivate with passion its 18.5 hectare vineyard, scattered over the Celles-sur-Ource region, in the heart of the Cote des Bar, composed of pinot noir, chardonnay, but mainly of very old vines of pinot blanc. 160 000 flasks of champagne of character are thus elaborated and marketed every year.

Visual
aspect :
- Gold, with light tints of green.
- Fine bubbles.
- Discreet bead.
Nose :
- Blossoming from the start.
- First with scents of apple, peach and apricot,
signatures of the 25% of pinot blanc harvested in 2009 at perfect ripeness
thanks to mastered returns.
- The nose then reveals all its complexity, with
scents of citrus fruits, hazelnut and exotic fruits thanks to the 25% of
chardonnay, but also scents of red fruits and delicate spices, expressions
of the 50% of pinot noir.
- The champagne finally reveals its maturity, result of 3 years of ageing on laths, with scents of cocoa, honey and roasted coffee.
Palate :
- At first sensual, thanks to the just dosage with
8g/L of added sugar during disgorgement.
- Warm and captivating effervescence, with a lively
minerality.
- Beautiful complexity, warm, maybe the result of
the use of the biologic yeasts for the realisation of the malolactic
fermentation of the base wines.
- Great length in the mouth.
With this Cuvee de Reserve, three generations of the Gerbais family, Pierre, Pascal and Aurelien, knew how to put together their oenologic talents (cold extraction of the musts, separate vinification of all the plots of the estate, respect of a delay of 6 months between disgorgement and commercialisation, …) to offer us a touching interpretation of the Celles-sur-Ource.
