Wine growers in Ville-sur-Arce for 3 generations, the champagne Phillipe Thevenin cultivates with care its 5.80 hectare vineyard, composed of 80% of pinot noir, 15% of chardonnay and 5% of pinot meunier. A lasting viticulture and a traditional and careful oenology are at the source of the elaboration of 25 000 bottles of quality champagnes per year.

Visual
aspect :
- Dense
gold.

bubbles and refined effervescence.
- Delicate bead, persistent after service.
Nose
:
- Generous
from the start, it blooms progressively until fullness.
- Sensual
aromas of honey, beeswax, caramel and croissant, lightly roasted,
expressions of the rising maturity of the vintage obtained by 3 years of
ageing on laths before disgorgement.
- Subtle
scents of citrus fruits, apple, peach, apricot, hazelnut and white
flowers, delicately iodized and mentholated, thanks to the 15% of
chardonnay.
- Later, the red fruits accompanied by subtle spices, signatures of the pinot noir (85%), a part of which originates from a large plot of old vines (over 50 years old) exposed south, finally reveal themselves.
Palate
:
- Pure
attack, accompanied by a touching minerality, permitted by the light
dosage with only 4g/L of added sugar during disgorgement.
- The
mouth then becomes ample, deep and warm, structured-like, maybe thanks to
the addition of a small proportion (10%) of the end juice from the
pressing of the grapes ( first taille), richer and more robust.
- We
find again the red fruits in the finish.
- Great length in the mouth.
With this cuvee L'Extra T (as in Thevenin) confidential (3 000 flasks), producer Philippe Thevenin knew how to find the ideal marriage between the grape varieties and the years (mainly 2009, completed by 2008), to give us a moving champagne.
To enjoy during the aperitif or a meal with friends, with a scampi tartar, for example.
