Nose :

Radiant aromas of red and
black fruits (cherry, raspberry, blackcurrant, blackberry and strawberry),
supported by delicate spices (white pepper, cinnamon and vanilla), signatures
of the Pinot Noir, exclusive varietal of the cuvée, harvested by hand in 2005.

The maturity of the Champagne
is then revealed with some sensual scents of honey and gingerbread, evolving
towards cocoa and roasted coffee, the result of 8 years of ageing on laths of
the bottles, with autolysis of the prise
de mousse yeasts.
Palate :

Classy attack,
allowed by the timely stop of the malolactic fermentation of the base wines and
by the low dosage, with only 3 g/L of sugar added at disgorgement.

The mouth then becomes ample and dense, coupled with a
joyful life force and a vibrant minerality, expressions of the terroir of the 40 years old plot “Les
Hauts Chemins”, exclusive origin of the grapes, on which the soil is
mechanically worked (ploughing, earthing up and down), for a deeper rooting.

Tasty finish,
barely spicy.

Very good length on the palate.
With this
restricted cuvée Les Hauts Chemins
(900 bottles and 300 magnums), Didier and Thierry Vesselle, its producers, put
their expertise in the service of the Pinot Noir, to offer us a remarkable
interpretation of the Grand Cru of Bouzy.
To taste from aperitif to meal, with a roasted loin of lamb and thyme flower, for example.
Settled in Bouzy for 4 generations,
the Champagne House Maurice Vesselle is based on its vineyard of 7.5 hectares
of old vines spread over Bouzy (80%) and Tours-sur-Marne (20%). A real desire
to reduce the environmental footprint (certified Haute Valeur Environnementale
and Qualenvi) and an inspired oenology give birth each year to 60,000 bottles
of highly expressive Champagnes, revealing terroirs.
