Wine grower at Grauves in Côtes des Blancs, the Champagne Marc Dominé carefully grows its 3.37-hectare vineyard, planted with 97% of Chardonnay and 3% of Pinot Noir, to market every year 10,000 bottles of quality Champagnes developed in the respect of the tradition of Champagne.
Classic and careful presentation
Visual Aspect:

Golden, with green tinges.

Fine bubbles.
·
Subtle and persistent bead.
Nose:
·
Intense and harmonious.
·
Flourishing
aromas of cherry, blackcurrant and blueberry, translations of the 25 % of black
vines (Pinot Noir and Pinot Meunier in equal parts)

Then the
nose reveals the majority of Chardonnay (75%), with flavours of very ripe apple
and pear, walnut and hazelnut, with touching nuances of peach, apricot and
raisins.

Later, the Champagne
reveals a beautiful maturity, with sensual notes of brioche and Viennese
pastries, lightly toasted, result of 5 years of ageing on laths before disgorgement, but also of
the particular blend of 25% of very old reserve wines, rejuvenated every year, composed of 34
vintage wines from 1977 till 2006, blended with 75% of base wines of 2007.
Palate :

Pure first taste, added with a soft minerality which
accompanies us throughout the tasting

Unctuous
roundness, backed by a creamy sparkling, thanks to the judicious realization of
the malolactic fermentation, but especially to the generous dosage with 12 g/L
of sugar added at disgorgement.

Savoury and subtly spicy finish.
·
Big length in
mouth.
With this Cuvée
Brut, Marc Dominé, the producer, proposes a traditional blend Champagne of a good
value for money, a successful interpretation of the terroir Premier Cru of
Grauves.
To enjoy at any
occasions, from the aperitif to the meal, to accompany a saddle of hare in a
crust of hazelnuts, for example.
