Aspect :

Nose :

Sensual, it gently unveils its
subtlety and its elegance.

Delicate fragrances of apple,
pear, candied citrus fruits (lemon and grapefruit), apricot and raisin, coupled
with notes of white flowers, barely iodized and mentholated, signatures of the
Chardonnay, unique varietal, carefully harvested by hand in 2011 in a plot
located at the foot of the House.

Later, the maturity of the
cuvée is revealed, with scents of honey, caramel and pastry, moving towards
roasted coffee.
Palate :
·
Lively, accurate and mineral attack, allowed by the
rigorous selection of the first juices (cuvée), purer, during the soft pressing
of the grapes.

The tension, touching, then makes way to a caressing
warmth, reinforced by the judicious fulfillment of the malolactic fermentation
of the base wines, supported by the adjusted dosage, with 8 g/L of sugar added
at disgorgement.

Creamy
effervescence.
·
Revealing the citrus fruits, apple and pear already
perceived at the nose.
·
Balanced finish, underlined by a spicy touch.
With this restricted Cuvée Inédite (3000 bottles per year), Alain Sacy and Jonathan Sacy, its producers, offer us a touching personal interpretation of the Chardonnay from the Grand Cru terroir of Verzy, exclusive origin of the grapes.
To taste
as an aperitif, or during a meal among friends, to accompany a roasted bass
with salted butter, for example.
Established in Verzy with a vineyard of 20 hectares, passionately cultivated, mainly located in the Mountain of Reims, the Champagne House Louis de Sacy produces around 250,000 bottles of high quality Champagne per year, mainly marketed for exportation (55%) under the eponymous brand, homage to an ancestor, brilliant lawyer and academician of the eighteenth century, first owner of a plot in Verzy.
