Guide VERON des Champagnes 2016
(around 40 euros per bottle)
Sober and modern presentation.
Aspect :
·
Golden, deep.
·
Very fine bubbles.
·
Reserved bead of bubbles.
Nose :
·
Radiant and powerful, it carries
us away in a particular universe, heady and flavoured.
·
Intense aromas of candied red
fruits (strawberry, raspberry, red currant and cherry), supported by subtle
spices (vanilla, cinnamon and liquorice), with apple and pear compote,
expressions of black varietals (70% of Pinot Noir and 30% of Pinot Meunier),
selected on the terroirs of
Châtillon-sur-Marne, Hautvillers, Cumières and Verneuil.
·
The joyful maturity of the
Cuvée is then revealed, the result of ageing on laths of the bottles for 7 years
before disgorgement, with some warm scents of honey, beeswax, caramel and
pastries, barely toasted.
Palate :
·
Dense and deep on the palate, with a vibrant
minerality, underlined by the slight dosage with only 4g/L of sugar added at
disgorgement.
·
The mouth then becomes sensual, enhanced by a delicate
freshness, perhaps the result of the rigorous selection of the first run wine
(Cuvée), purer, during the pressing of the grapes.
·
Dense finish.
·
Good length on the palate.
