Settled in Trois-Puits in the Reims mountain for five generations, the champagne Jean Baillette-Prudhomme cultivates with passion its 5 hectare vineyard planted with the three grape varieties of the Champagne region to elaborate and market 30 000 of traditional champagnes per year, patiently aged in its deep clayey caves.
Sober and luxurious presentation. Evocative name of the passing of the traditions of the Champagne region, founder value of the estate.
Visual
aspect :
- Pale gold.
- Extremely fine bubbles.
- Discreet bead, refined.
Nose :
- Intense with a remarkable complexity.
- Soft nuances of vanilla, subtly woody, ever so
lightly smoked, thanks to the ageing of 12 months of the base wines from
the meticulous fragmented vinifications, in 2 to 7 year old oak vats and from
Meursault.
- Blossoming maturity, signature of the brand, with
aromas of honey, beeswax and croissant, obtained by a long ageing on laths
(5 years)
- Notes of apple and pear compotes, thanks to the
chardonnay (80%), selected on the premiers crus soils of the Mont Ferre.
- Later, the nose reveals an unexpected touch of red fruits, expressions of the pinot noir(20%) from Rilly-la-Montagne (premier cru).
Palate :
- It reveals straight away a pure minerality, mark
of the chalky soils, strengthened by
the rigorous selection of the first juices (cuvee), purest, during
the pressing of the grapes and highlighted by the just dosage with 7g/L of
added sugar during manual disgorgement.
- The mouth then becomes soothing and warm, carried
by a tender effervescence.
- Very great length in the mouth.
With this Cuvee Heritage, wine grower Laureen Baillette knew how to find the fair blend ( a third of 2007, a third of 2006 and a third of previous years) to give us a moving traditional champagne.
To enjoy during a meal with friends, with a lobster gratin with seasonal vegetables, for example.
