Guide VERON des Champagnes 2016
(around 65 euros per bottle)
Inimitable bottle, reflecting the history of Champagne.
Aspect :
·
Golden, decorated with bright
emerald glints.
·
Refined
effervescence.
·
Delicate
bead of bubbles.
Nose :
·
Generous, it takes us into a perfumed
and sensual universe.
·
Initially marked by candied
citrus fruits, apple and pear compote, hazelnut, almond and white flowers, odes
to the Chardonnay, exclusive varietal.
·
The nose then becomes radiant,
with some gourmet fragrances of pastry, chocolate and roasted coffee,
expressions of the perfect maturity of the cuvée
obtained by 9 long years of ageing on laths of the bottles with corks, before
disgorgement, enhanced by subtle woody notes, result of the vinification and
the ageing of 40% of the base wines in oak barrels.
Palate :
·
Pure attack, thanks to the selection of the first
juices (cuvée) during the pressing of
the grapes, reinforced by the timely stop of the malolactic fermentation of the
base wines.
·
The mouth then appears to be deep and balanced,
carried by a vibrant minerality, delicious signature of the Grands Crus of
origin of the grapes (Avize and Chouilly in the Côte des Blancs).
·
Sensual and warm
finish.
· Remarkable length on the palate.
Bertrand
Lhopital, executive director of the Champagne House J. De Telmont and Sylvie
Collas, Chef de Cave, were able to draw out the quintessence of the abundance
of 2004, to offer us an unforgettable cuvée
O.R. 1735 – 2004.
Gastronomic
Champagne, to taste with a roasted venison loin and Goji berries, for example.
Founded
in 1912 by Henry Lhopital, the Champagne House J. De Telmont perpetuates the
family traditions since then. A vineyard of 36 hectares, spread over 8 Crus,
cultivated in the greatest respect of the environment (Certified Ampelos and 3
hectares cultivated according to organic viticulture principles), completed by
110 hectares of rigorously selected supply, and an inspired oenology allow the
production and the marketing of a range of Champagnes with personality.
