Guide VERON des Champagnes 2016
(around 148 euros per bottle)
Mythical Champagne
Luxurious presentation. Wire-cap replaced by a clip, on an inimitable bottle, signature of the House.
Aspect :
·
Amber-coloured, radiant.
·
Very fine bubbles.
·
Refined bead of bubbles.
·
Generous tears.
Nose :
·
Captivating, taking us into a
sensual whirl, unique and endless.
·
Aromas of candied red and
black fruits, expressions of the Pinot Noir (70%), embrace the delicate notes
of spices.
·
Later, the Chardonnay (30%) is
revealed, with some scents of apricot and raisins, apple and pear compote,
enhanced by the great maturity due to the ageing on laths of the bottles for 6
years before disgorgement, with its warm fragrances of chocolate and roasted
coffee.
Palate :
·
Silky attack.
·
Crystal clear minerality, a characteristic sign of the
chalk of the Grand Cru of Aÿ, exclusive origin of the grapes, carried by a
sophisticated elegance, perhaps the result of the inspired selection, with
tasting, of the first juices (tête de
cuvée), during the pressing of the grapes.
·
The mouth then becomes sensual, definitely allowed by
the vinification and the ageing (12 months) of the base wines on whole lees, in
228L barrels built with oaks from the Argonne forest, the birthplace of the
great wines of Champagne.
·
Rare length on the palate.
With this cuvée
Multi Vintage Rosé Fût de Chêne, Claude Giraud realized the perfect blending,
with 6% of red wine and 94% of white wine, and 3 different vintages with a
majority from 2007, to offer us a moment of grace, delicate and
unlikely.
Gastronomic wine, to taste with thigh of
braised squab, for example.
12th generation of wine growers, established in Aÿ since 1625 and Champagne House since 1990, the Champagne House Henri Giraud has around 28 hectares, mainly located in the Grand Cru of Aÿ, to compose exceptional cuvées. Thus, 280,000 bottles are produced each year, to establish the Giraud style, between creativity and ancestral traditions.
