Inimitable bottle, decorated with the label upper right corner turned down, signature of the cuvée born in 1882, after the acquisition of a vineyard in the Grand Cru of Cramant.
Aspect :

Pale gold.

Fine bubbles.

Reserved bead of bubbles.
Nose :
·
Radiant, it slowly unveils its
touching aromatic harmony, reinforced by the respect of the long period between
the disgorgement and the marketing (6 months).

Aromas of citrus fruits,
apple, pear and white flowers, barely iodized and mentholated, coupled with
delicate hints of exotic fruits obtained by the alcoholic fermentation of a
part of the base wines at 12°C, hymn to Chardonnay, exclusive varietal of the cuvée, from a single year of harvest.

The maturity of the Champagne
is revealed at last, obtained by 3 years of ageing on laths of the bottles
before disgorgement, with some soft fragrances of toast and brioche.
Palate :

Pure and mineral
opening.

The mouth then becomes sensual, thanks to the bâtonnages practised during the ageing
of the base wines, underlined by an ethereal effervescence obtained by a light prise de mousse with only 4.5
bars of pressure in the bottles (instead of 6 traditonally).

Dense and lively
finish.

Great length on the palate.
With this Blanc de Blancs Mumm de Cramant, Didier Mariotti, Chef de Cave
of the Champagne House G.H. Mumm, was able to implement an accurate and
inspired oenology, to enhance the Grand Cru of Cramant, historical terroir of
the House.
Ideal for an intimate moment, as an aperitif, or during a meal, with some red mullet fish fillets with lemon and ginger, for example.
